Wood Ear Mushrooms encompasses a species group of mushrooms that are usually 1 to 3 inches across. It gets its name from the fact that they are sometimes shaped like an ear. I would just describe them as mis-shaped oval sometimes nearly round.
The stalk of this mushroom is very short or attached laterally. So, no long or thick stalks here. The Wood Ear Mushroom is usually found in clusters on dead hardwoods, although some species in this group can be found on conifers. When fresh it will have a firm elastic texture and be brown in color. If dried out it will be gray and brittle. It will be relatively smooth on its surface.
The Wood Ear Mushroom is relatively easy to identify and all species of Wood Ear Mushroom are edible. They don't have much taste so it isn't something you are going to serve up by itself as a snack. However, they are an excellent addition to soups and stews.
One aspect of Wood Ear Mushrooms that make them an excellent survival food is that they can be found year round. Even during the coldest winter months. This property puts this food much higher on my list of favorite survival foods.
